Cauliflower & Leek Gratin

About a year ago, Alan and I made the decision to start purposefully eating cleaner. While it’s been an adventure exploring new recipes and cooking meals with ingredients I’d never heard of prior, my favorite clean eating recipes are ones that put a healthy spin on comfort foods (specifically any dishes that involve heavy cream or cheese).

We recently tried a version (you can find a similar one here) of one of my favorite cheesy sides from this cookbook, which has quickly become my go-to book when planning meals for the week. Paired with some mini meat pies we picked up from Cush’s Grocery, it was the perfect complementary, clean comfort dish.
