I like to think of myself as a soup connoisseur, in that I could eat nothing but soup for the rest of my life and be perfectly content. I normally try to incorporate one or two different soup recipes into our weekly dinner menus, because they’re quick and easy to make, which makes it easier for me to keep up with eating healthy during the week and not fall prey to just ordering in takeout after a long day at work.
One of my favorite soups to make is black bean soup. It only requires a few ingredients, but it’s packed with flavor and very filling, thanks to the beans. I’ve tried several different recipes, but this one by Epicurious is currently my favorite. The jalapeños add an extra kick of spice, and the crumbled feta on top is the perfect complement. To make our meal a little more filling, we also made grilled cheese sandwiches with havarti and and garlic white cheddar cheese on French bread.
