I love cooking with tomatoes during the summertime, and since they are so abundant at the farmer’s market this time of year, I normally end up incorporating them into a dish at least once a week. I first tried this recipe for a rustic tomato and zucchini tart last year, and it instantly became a staple in our home for the rest of the summer. The combination of fresh herbs, sautéed leeks, and sweet cherry tomatoes makes for the perfect weeknight meal. While the recipe really only makes enough for two people, the prep doesn’t take long at all, which makes it easy to make multiple tarts when you’re cooking for more people. Pair with a nice bottle of Chardonnay, and you’re sure to impress any dinner guests!
